Inoculation

The log, stump, and totem techniques function nicely with Italian Oyster mushrooms. Colonization is rapid and fruiting may begin in four to twelve months, depending on environmental factors. They produce the most fruit in the spring and autumn and like softer hardwoods such as aspen and poplar. They are also compatible with maple.

Storing

If you don’t plan to use immediately, you can refrigerate your spawn for up to 6 months.

Cooking

Oysters from Italy may be substituted for button mushrooms in most dishes and combine nicely with a variety of cuisines and tastes. Undercooked oyster mushrooms, like other oyster mushrooms, retain water and may acquire a sticky texture. If you want a firmer or drier texture, continue cooking until the liquid evaporates and the vegetables begin to brown.
